Vegan Coconut Chocolate Banana Oatmeal Recipe

I have always been a self-proclaimed lazy eater, I’m the type to opt for a granola bar or microwave meal before spending time on cooking or eating out. I used to be hesitant to start a vegan or plant-based diet because I thought I would have to start spending hours cooking every week. Once I finally decided to go fully vegan I learned quickly there are a lot of fast, easy and delicious vegan meals that cater to the laziest of chefs. One of my favorite go-to meals is oatmeal, I can add all of my favorite fruits and toppings to it and it only takes 15 for me minutes to prepare.

One of my favorite oatmeal bowls is my vegan coconut, chocolate banana oatmeal bowl. To make this recipe you will need:

Vegan oatmeal ingredients, coconut milk, truvia, cacao nibs, oats
Oatmeal Ingredients

Oats-I used steel cut oats

Cacao Powder(not pictured)

1 Banana (not pictured)

Coconut flakes (not pictured)

Coconut milk

Cacao nibs

Stevia (I used Truvia)

Salt

 

Start off by combining coconut milk, water and oats together in a saucepan or a small pot. Bring the liquid to a boil and stir regularly to make sure the oats don’t stick to the bottom. While boiling add salt, stevia and cacao powder. This will give your oats more flavor. I let this boil until it is a thick consistency, usually around 10 minutes. If you don’t have time to prepare your oats in the morning, you can also opt to combine your ingredients in the fridge overnight! I usually go for the overnight oat option on weekdays when I have work in the morning, so I can sleep for as long as possible.

After your oats have fully boiled, lower your stove temperature to a simmer and begin preparing your topping. For this recipe you will top your bowl with one banana, cacao nibs and coconut flakes! I would recommend using unsweetened coconut flakes for a more natural taste, all I had available today were pre-sweetened and it overpowered the bowl’s flavor. Slice up your banana as desired add your coconut and cacao nibs and enjoy!

If you are looking for a more protein rich option to start your day out I also occasionally add a scoop of all-natural almond butter or vegan protein powder in with my oats after cooking! This will alter the taste of your oats but gives you and extra burst of energy to start your day!
