Smoothie bowls are a staple in my daily diet, they are fun to make, delicious and you can be creative with them. One of my favorite go to recipes is the Blueberry Chocolate Oatmeal smoothie bowl. It’s completely vegan, filling and tastes amazing! Blueberries contain Vitamin C and B6 as well as potassium, fiber and folate, blueberries have been shown to help decrease cholesterol and improve heart health. If you want to try this heart healthy and delicious smoothie you will need;
1 cup Frozen or fresh blueberries-I used frozen berries to give it a thicker consistency
1 cup Oats- I used steel cut oats, you could also substitute this with quinoa flakes or granola
2 tbsp. Cacao powder unsweetened
A splash of Coffee-this is optional, but I like a little caffeine with my smoothies
1 tbsp. Chia Seeds
Granola of your choice
1 scoop Chocolate vegan protein powder
1.5 cups Non-dairy milk-I used unsweetened almond milk. For the chocolate lovers out there, try dark chocolate almond milk for a stronger chocolatey flavor!
I don’t typically measure out my ingredients to save time and I like to play with the consistency. For this particular smoothie I wanted two servings, so I added extra almond milk, oats and blueberries. You can play around with the ingredients to find your favorite consistency. I tend to like mine a bit thicker for a smoothie bowl, so I add more oats and blueberries than almond milk. If you plan on drinking this smoothie with a straw instead of a spoon add more almond milk and use fresh blueberries instead of frozen for a more liquid consistency!
To get a smooth blend in your smoothie bowl you will want to give the oats some time to soak in the milk before blending. Combine all your ingredients except the blueberries in a bowl and let them sit in the refrigerator overnight or for at least 4 hours. I am usually a bit impatient on this step (hangry anyone?) and only let the ingredients sit for about an hour but I would recommend waiting longer to get a better blend.
After you’ve let the ingredients sit, combine them and the blueberries into a blender and blend on the highest setting. I chose to top my smoothie with chia seeds, pumpkin seed flax granola and more frozen blueberries!
